Carrie Underwood Covers November Women’s Health Magazine (PHOTOS & VIDEO)

Country superstar/Season 4 American Idol champ Carrie Underwood is on the cover of the new November issue of Women’s Health Magazine. In the interview, she talks about her fitness routine, her go-to foods, and how she is devoting her time to preparing 2 big live events set to take place in the next couple of months:

On preparing for The Sound Of Music Live and co-hosting the CMA Awards for the 6th straight year:

My entire fall has basically been all about “The Sound of Music.” That’s a wonderful project that I’ve been asked to be a part of. It’s a live musical on TV so there’s been a lot of prep work. I’ve been in New York quite a bit doing run-through’s and working on a kind of music that’s not exactly the kind of music that I’m use to singing. So it’s been a lot of work and it’s been really challenging. But I think in the end it’s really going to be very rewarding. It’s going to be exciting to actually do a musical live on TV. Also the CMA awards have taken up a lot of my time. There are always different kinds of meetings that we have to have as hosts to get ready for that so it’s been all about big events for me. So a lot of prep work and then a big night.

While Carrie had already been preparing and rehearsing on her own in New York, yesterday marked the 1st day of cast rehearsal for The Sound Of Music according to co-producer Neil Meron:

On her affinity for coconut oil:

I put it on my food, I put it on my face, I put it on my hair. If it’s winter, the second I get out of the shower, I spread it all over and it feels really good and it smells good too.

On being (mostly) vegan:

“I am a vegan but I consider myself to be a practical vegan. If I order something on a menu and it has a sprinkling of cheese on top I’m not going to send it back. I’ve been vegetarian – no fish no chicken no meat vegetarian – for about a decade now. The vegan thing is something I try to do my best on because it’s a cheesy world out there. We recently went to Italy and they put cheese in, on and around everything. So I kind of had to be vegetarian when I was on vacation, and now that I’ve been back home I’ve been getting back into my vegan lifestyle. But I’m vegan at home. It’s when I go other places that it can be a challenge especially when you don’t exactly know what you’re ordering. It doesn’t say that there’s cheese on the menu. But like I said I’m practical vegan.”
